Do you need a fun back-to-school cookie? Do you have a last-minute BBQ to go to? Do you just want to make cookies for yourself? I've got you covered, here is my August recipe!
Root Beer Float Cookies!

Ingredients:
Cookies:
1 cup granulated sugar
1 cup packed brown sugar
1 cup butter softened
1/2 cup buttermilk
2 eggs
2 teaspoons root beer extract
1 teaspoon vanilla
4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
Frosting:
1 cup powdered sugar
1 tablespoon half-and-half
2 teaspoons butter softened
1 teaspoon root beer extract
Directions:
Heat oven to 375 degrees. Lightly grease cookie sheets. Set Aside
In a large mixing bowl, combine granulated sugar, brown sugar, 1 cup butter, the buttermilk, eggs, 2 teaspoons, root beer extract, and the vanilla. Beat at medium speed of electric mixer until well blended.
Add flour, baking soda, and salt. Beat at low speed until soft dough forms.
Drop dough by heaping teaspoons 2 inches apart onto prepared cookie sheets.
Bake for 10 to 12 minutes or until set. Cool Completely
In a small mixing bowl, combine frosting Ingredients. Beat at low speed of electric mixer until smooth
Spread frosting evenly on cookies
Let dry completely before storing.
Bev's Baking Tips!
Do not over bake these! They are a little cake-y when you take them out of the oven, so let them sit for a few minutes before putting the cookies on a cooling rack.
The root beer extract is a concentrated flavor so don't just use that root beer bottle you found in the back of your fridge. It won't have as much flavor.
For an extra kick, try a small dollop of whipped cream on top when serving!
